  1. Okay, so I am super new to using my food storage. So, I decided I would go on a mission to learn how to cook with my freeze dried and dehydrated foods. My first attempt was making Chocolate Chip Banana Bread. I took your advice and checked out the recipes on Emergency Essentials. I found the following recipe posted for Banana Nut Bread.

    2 Cup Whole Wheat Flour
    1/4 Cup Wheat Germ
    1 Tsp Baking Soda
    1/2 Tsp Salt
    1/2 Cup Chopped Nuts

    Sauce:
    1 1/2 Cup Mashed Freeze Dried Banana Slices
    1/4 Cup Vegetable Oil
    1/4 Cup Honey
    2 Eggs
    1 Tsp Vanilla
    Vegetable Cooking Spray


    1. Rehydrate Bananas; Drain excess water them mash.
    2. Combine dry ingredients in a large bowl; Make a well in the center of mixture.
    3. Combine banana, oil, honey, eggs, and vanilla.
    4. Add to dry ingredients, stirring just until moistened.
    5. Coat 9" x 5" x 3" loaf pan with cooking spray.
    6. Spoon batter into pan.
    7. Bake at 350°F for 1 hour or until toothpick comes out clean.

    I made some changes as follows. I didnt have any wheat germ or walnuts so I left it out. Instead I added chocolate chips at the end. I also made muffins out of it (made 12 large muffins) instead of bread and baked it for 15 minutes at 350.

    I was worried because unlike traditional recipes it didnt call for brown sugar or butter. But, anticipating things may be tough one day and I might not have those ingredients I made it as directed.

    Sooo, I was a little disappointed because they came out a little dry and I hate when you can taste that overwhelming whole wheat floury taste. I think it could have used a little butter or something just to balance it out and make it a little more moist. I didn't miss the sugar because it had honey in the recipe and I added chocolate!

    The problems I encountered were with rehydrating my bananas. Could you explain how to properly do this? I put them in hot/warm water for the required time on the can (5 minutes) and they were still hard as a rock. I expanded the time to about 15 minutes and they were a little softer.They also always float to the top of the water and dont get completely submerged so I had to stir is often. I got impatient and drained them anyway and blended them. Maybe they were still a little thirsty and made the batter a little more dry??
    Also, a heads up to other new people cooking with dehydrated food. The recipe called for 1.5 cups mashed banana. You need about three times the amount of dried banana to equal 1.5 cups AFTER being mashed up.

    All in all they are edible and taste okay. My kids won't stop asking me for more so I guess that is a good sign. I wouldn't take them to a potluck though cause they definitely aren't rave worthy! If I had added nuts instead of chocolate they probably would have been a choking hazard !! :) It was fun though.
